What’s on the menu for Christmas dinner? Darling Daughter 2
is bringing the pies. She brings my husband a pecan pie and—I hope—is bringing
a chocolate pie for me.
When my mom was alive, she always made wonderful pies and
candy. The only time all year that she made candy was for Christmas. Her pies
were the hit of any dinner, though. Her coconut cream pie was fabulous. Mmm, I
salivate just thinking about her pie.
I thought I’d give you the gift of sharing her recipe with
you.
COCONUT CREAM PIE
¾ cup sugar
1/3 cup flour
1 teaspoon salt
3 eggs with yolks separated from whites
2 cups milk
1 teaspoon vanilla
1 cup shredded coconut
9 inch pie shell, baked
Mix sugar, flour and salt well. Beat yolks of eggs
slightly. Add the milk and stir well. Cook slowly until mixture thickens. Add ¼
cup of the coconut. Pour into pie shell.
Beat egg whites until stiff. Add 3 tablespoons of sugar
and beat a little more, then top pie. Make sure egg white mixture meets edges
of crust. Spinkle with remaining coconut. Bake at 350 degrees F. for about 10
minutes or until lightly browned.
